Reading Susan’s blog page and viewing all the lovely fresh vegetables from her allotment among which were some courgettes, made me think of the organic produce in my fridge, which I will prepare this evening as follows. So in a sense this recipe I dedicate to Susan

Courgettes (Zuccini) with fresh herbs and olive oil

Fresh herbs and lashings of olive oil bring out the delicate flavour of creamy textures courgettes in this dish

Servings: 4
Preparation Time: 15 minutes
Cooking Time: 45 minutes

Ingredients
700g courgettes washed and diced into rounds

1 handful basil roughly chopped
1 tbsp sage roughly chopped
1 sprig rosemary chopped
2 garlic cloves, chopped
120ml extra virgin olive oil

Method

1. Pre-heat the oven to 200°C/gas 6. Place the courgettes in a roasting pan and sprinkle with the basil, sage, rosemary and garlic. Season with salt and pepper.

2. Drizzle olive oil over the potatoes and roast for about 45 minutes, or until golden brown.

    hi Kate – thanks for your comments about my site.   Yes we had an absolute glut of Courgettes this year form only 4 plants, have been giving them away and stocking up the freezer.   our recipe sounds delicious I will try it next time I pull a packet out of the freezer
